The Most Delicious Gluten-Free Chocolate Chip Cookies

Everybody loves a classic, right? Well let's make it a gluten free classic!

Ingredients
  

  • 1 cup Almond Flour
  • ½ cup Ground Flaxseed
  • ½ cup Vanilla Protein Powder
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 2 Eggs
  • ½ cup Butter softened
  • cup Truvia or your sweetener of choice
  • cup Brown Truvia or your brown sweetener of choice
  • 1 tsp Vanilla Extract
  • ½ cup Dark Chocolate Chips

Instructions
 

  • In a large bowl, combine Almond Flour, Flaxseed, Protein Powder, Salt, and Baking Soda. Mix well.
  • Hollow out a well in the middle of the dry ingredients and add Eggs, Butter, Sugars, and Vanilla. Whip together the wet ingredients in the middle first then slowly expand your stirring to incorporate all of the dry ingredients.
  • Stir in Chocolate Chips and chill dough for 15 minutes.
  • Meanwhile, preheat oven to 350° and prep a cookie sheet with parchment paper and non stick spray.
  • Once dough has chilled, remove from fridge and scoop two tablespoons of dough into your hand and roll into a ball and place on cookie sheet. Repeat until you fill your cookie sheet - leaving two inches between cookie dough balls to allow for slight spreading.
  • Bake for 12-15 minutes.
