Lemon Bread
- 4 Eggs
- ½ cup Butter softened (nearly melted)
- ½ cup Truvia or granulated sweetener of your choice
- zest of One Lemon
- ¼ cup Lemon Juice
- 1 cup Almond Flour
- 1 cup Vanilla Protein Powder link to my favorite protein powder in the Blog Post
- 2 tsp Baking Powder
- ¼ tsp Salt
Icing (optional)
- 1 cup Powdered Truvia or powdered sweetener of your choice
- 1-3 tsp Lemon Juice added 1tsp at a time
Lemon Bread
In large bowl, mix together eggs, butter, sweetener, lemon zest and lemon juice
On top of wet mixture, add almond flour, protein powder, baking powder, and salt. Mix until combined
Pour batter into greased loaf pan
Bake at 350° for 40 minutes. Let cool 30 minutes before icing and Enjoy!
