Cookies
- ¼ cup Butter melted
- 1 cup Truvia or your favorite granulated sugar alternative
- 2 Eggs
- 1 tsp Vanilla Extract
- 1 cup Protein Powder I used Coffee flavor but Vanilla would work too
- 1 tsp Coffee Grounds
- 1 Tbsp Cocoa Powder
- 1 tsp Baking Powder
Icing (optional but highly recommended)
- 1 Tbsp Butter melted
- ½ cup Powdered Truvia or your favorite powdered sugar substitute
- 1 Tbsp Almond Milk more if needed
Cookies
Preheat oven to 350℉
In a medium sized bowl, mix together Butter, Truvia, Eggs, and Vanilla until combined.
On top of wet mixture, add Protein Powder, Coffee Grounds, Cocoa Powder, and Baking Powder. Mix until combined.
Scoop TBSP sized dough balls onto prepped cookie sheet.
Bake cookies for 8-10 minutes
Icing (optional but highly recommended)
In small bowl, mix together butter and powdered truvia.
Add Almond Milk one TBSP at a time until desired consistency is reached. I like mine to be thin so I could drizzle it over top but a thicker icing plopped on top would be delicious as well!
