Preheat oven to 350°. Line a baking sheet with foil and make sure it goes up the sides. Spray foil thoroughly with nonstick spray.
Lay out saltine crackers on foil-lined cookie sheet, breaking in to pieces if needed to completely fill the sheet.
In a small saucepan, melt butter. Stirring occasionally.
Add brown Truvia and stir. Bring mixture to a boil and let it boil for 3 minutes stirring occasionally to that it doesn't burn.
Remove from heat and stir in vanilla extract
Spread caramel mixture over saltine crackers - using spatula to spread out as evenly as possible.
Bake for 5 minutes, remove from oven and sprinkle dark chocolate chips then put back into oven for 1 minute.
Remove cookie sheet and use spatula to spread melted chocolate chips around.
This is where you can get creative with your toppings - add sprinkles, nuts, peppermint pieces, or whatever you would like while the chocolate is still melty
Let cool for 20 minutes then place cookie sheet in the fridge for 3 hours
Once chilled, remove foil from cookie sheet and place on flat surface where you can cut or break off pieces to serve and enjoy!
I like to bag up these pieces and keep them in the freezer throughout the holiday season to enjoy whenever I have a craving!
