Talk about a blast from the past! Nothing quite like a chocolate chip cookie and a glass of milk to snack on after school before you go out to play with your neighborhood friends. Chocolate chip cookies are such a classic snack that sometimes we get nervous to change it up. It’s never quite the same as when your grandmother used to make it.
Well this recipe boasts a soft, chewy center with loads of melty chocolate chunks to satisfy the whole family’s sweet craving without all the refined sugar and calories that come with our favorite classic cookie. These are the most delicious gluten-free chocolate chip cookies that will become your family’s classic recipe!
Gluten-Free Chocolate Chip Classic
I changed things up a bit and created this recipe using almond flour, ground flaxseed, and protein powder to give us a well rounded flour base that still mixes well and bakes into a soft, chewy cookie.
Baking with almond flour is a bit different in that it can very quickly create hard, dry baked goods. I have found was that using a mix of almond flour, flaxseed and protein powder helps to create a softer, more springy baked good. This is a trick that I carry over to each recipe I create.

The Most Delicious Gluten-Free Chocolate Chip Cookies
Ingredients
- 1 cup Almond Flour
- ½ cup Ground Flaxseed
- ½ cup Vanilla Protein Powder
- 1 tsp Baking Soda
- 1 tsp Salt
- 2 Eggs
- ½ cup Butter softened
- ⅓ cup Truvia or your sweetener of choice
- ⅓ cup Brown Truvia or your brown sweetener of choice
- 1 tsp Vanilla Extract
- ½ cup Dark Chocolate Chips
Instructions
- In a large bowl, combine Almond Flour, Flaxseed, Protein Powder, Salt, and Baking Soda. Mix well.
- Hollow out a well in the middle of the dry ingredients and add Eggs, Butter, Sugars, and Vanilla. Whip together the wet ingredients in the middle first then slowly expand your stirring to incorporate all of the dry ingredients.
- Stir in Chocolate Chips and chill dough for 15 minutes.
- Meanwhile, preheat oven to 350° and prep a cookie sheet with parchment paper and non stick spray.
- Once dough has chilled, remove from fridge and scoop two tablespoons of dough into your hand and roll into a ball and place on cookie sheet. Repeat until you fill your cookie sheet – leaving two inches between cookie dough balls to allow for slight spreading.
- Bake for 12-15 minutes.
