Peach Scones
A sweet start to your day
Ingredients
Scones
- 2 cups Almond Flour
- ½ cup Ground Flaxseed
- ½ cup Vanilla Protein Powder
- ½ tsp Baking Soda
- ¼ tsp Salt
- 2 TBSP Cold Butter right outta the fridge
- 2 Eggs
- 1 TBSP Granulated Truvia
- ½ cup Diced Peaches
Icing (optional but highly recommended)
- 1 cup Powdered Sugar
- 1 TBSP Maple Syrup
- 1-3 TBSP Almond Milk
Instructions
- In a medium bowl, mix together almond flour, flaxseed, vanilla protein powder, baking soda, and salt.
- On top of dry ingredients, cut up cold butter and using two knives or a pastry cutter, cut in butter to dry ingredients until mixture is clumpy.
- Add in the rest of the ingredients and mix dough until just combined.
- On a surface sprinkled with almond flour, roll out dough into a 1/2in thick square
- Cut square into four quarters and then cut each quarter into two triangle halves.
- Sprinkle the top of scones with granulated truvia
- Place each triangle onto a lined and sprayed cookie sheet
- Bake at 350℉ for 20min or until golden brown.
- While baking, mix together icing ingredients until desired consistency is reached
- Let scones cool for 10min before drizzling the top with icing
