So here we are in November and I’m still wanting the warm weather that allows me to get out and enjoy the sunshine on a park with my kiddos. I am missing the longer days, the warmth, and the ease of leaving the house without bundling up every time!
Enjoy these Lemon Lavender Bars to bring the sunshine into your home! What a summery treat but really, it can be enjoyed anytime of the year.
Lavender Lemon Bars
A summer time favorite that's perfect anytime of the year
Ingredients
Crust
- 1½ cup Almond Flour
- ½ cup Ground Flaxseed
- ¼ cup Butter
- 2 TBSP Granulated Truvia
Filling
- ¼ cup Lemon Juice
- 1 TBSP Lemon Zest
- 1 cup Granulated Truvia
- 1 Egg
- ¼ cup Vanilla Protein Powder
- 1 tsp Baking Powder
- 1 TBSP Dried Lavender
- Powdered Truvia for topping
Instructions
- In a medium bowl, mix together all crust ingredients and press crumble into the bottom of a 9×9 pan lined with parchment paper and sprayed with non stick spray
- Bake crust at 350℉ for 20min
- Using the same bowl, mix together all filling ingredients until well combined. Pour filling over cooked crust
- Put bars back into the oven for another 25min
- Let bars cool before topping with powdered Truvia. Store bars in fridge until ready to serve
