May Sweet Breads – Lean Lemon Loaf

Do you ever have a break through that just makes you do a happy dance? Well this is mine… This lean lemon loaf was such a fun idea and I was worried about it not turning out but it was a total hit amongst the family and I am so happy it worked! *Cue my happy dance*

Creating a healthier version of our all time favorites is something that brings me so much joy! I hope you enjoy this journey too.. It’s a challenge and can be rewarding or incredibly defeating. Either way, I keep moving forward to keep creating and that just it, I have fallen in love with the process of creating these recipes rather than just focusing on the product. I enjoy being in the kitchen, I love presenting a new recipe to those close enough to me to taste test and getting honest, constructive criticism.

This recipe is one I have had my eye on modifying for quite some time. Who doesn’t love a warm slice of lemon bread? So I started researching how the acidic lemon reacts with different flours and leavening agents. I found that almond flour, protein powder, and baking powder react really well with lemon juice. That combo produces a dense spongy texture.

What makes this Lemon Loaf, lean, is the fact that I have switched out the All-Purpose flour that is usually used with a mix of almond flour and protein powder. This combo provides a cravable texture. It leaves you coming back for another slice.

This lean lemon loaf recipe is a cravable product that will keep your family asking for more! You can double the recipe if you need to provide for more than one family at a time. You can make mini loaves if you are looking to gift multiple loaves to multiple people. I know they would all appreciate this lean lemon loaf on their front porch.

Lean Lemon Bread

Ingredients
  

Lemon Bread

  • 4 Eggs
  • ½ cup Butter softened (nearly melted)
  • ½ cup Truvia or granulated sweetener of your choice
  • zest of One Lemon
  • ¼ cup Lemon Juice
  • 1 cup Almond Flour
  • 1 cup Vanilla Protein Powder link to my favorite protein powder in the Blog Post
  • 2 tsp Baking Powder
  • ¼ tsp Salt

Icing (optional)

  • 1 cup Powdered Truvia or powdered sweetener of your choice
  • 1-3 tsp Lemon Juice added 1tsp at a time

Instructions
 

Lemon Bread

  • In large bowl, mix together eggs, butter, sweetener, lemon zest and lemon juice
  • On top of wet mixture, add almond flour, protein powder, baking powder, and salt. Mix until combined
  • Pour batter into greased loaf pan
  • Bake at 350° for 40 minutes. Let cool 30 minutes before icing and Enjoy!

Icing (optional)

  • In a small bowl, mix together powdered truvia and lemon juice until desired consistency is reached. May use Almond Milk instead of Lemon Juice if desired.
