My favorite cracker toffee! This month I want to highlight four of my favorite recipes that I have already shared with you but that I believe deserve another mention because they are just so dang good!
This is my Favorite Cracker Toffee
I shared this recipe close to the holidays because it is truly a recipe I share with friends and family every year. I make double or sometimes triple batches so that I have plenty at home for my family and plenty to give away in goodie bags or bring to holiday parties.
It is so easy, incredibly satisfying, and very cost effective.
Easy, Satisfying, Effective
This recipe uses just five ingredients and creates a perfect match up of salty, sweet and bitter craveability. The crackers topped with quick candy toffee topped with rich, dark chocolate is so good year round. You definitely have to enjoy these treats close to the holidays when it can be shared with family, friends, or neighbors. But I will let you in on a little secret, I have actually been craving this recipe lately. Now that the days are getting warmer… A cool, sweet, crunch of this toffee would certainly do the trick on a warm afternoon!
The satisfaction even just a small bite of this candy brings is incredible! I have a sweet tooth and I even find that I can’t have too much. Help to curb your cravings with just a little bite instead of feeling like you’ve overindulged at all.
The cost effectiveness of this recipe is incredible! The low ingredient count paired with the ease of breaking up the candy into little gift bags equals an easy gift. Cracker Toffee can be given to lots of people all from ONE recipe and ONE afternoon of making toffee. You don’t have to invest much time nor money into making these treats.
Variations
I would love to hear your variations. Give this recipe a try and add your own spin. Top it with nuts, swirl peanut butter on top, chopped strawberries, whatever suits your fancy! Tell me all about it.
Cracker Toffee

- 1 cup brown Truvia or brown sweetener of your choice
- 1 tsp vanilla extract
- 12oz pkg dark chocolate chips
Instructions
- Preheat oven to 350°. Line a baking sheet with foil and make sure it goes up the sides. Spray foil thoroughly with nonstick spray.
- Lay out saltine crackers on foil-lined cookie sheet, breaking in to pieces if needed to completely fill the sheet.
- In a small saucepan, melt butter. Stirring occasionally.
- Add brown Truvia and stir. Bring mixture to a boil and let it boil for 3 minutes stirring occasionally to that it doesn't burn.
- Remove from heat and stir in vanilla extract
- Spread caramel mixture over saltine crackers – using spatula to spread out as evenly as possible.
- Bake for 5 minutes, remove from oven and sprinkle dark chocolate chips then put back into oven for 1 minute.
- Remove cookie sheet and use spatula to spread melted chocolate chips around.
- This is where you can get creative with your toppings – add sprinkles, nuts, peppermint pieces, or whatever you would like while the chocolate is still melty
- Let cool for 20 minutes then place cookie sheet in the fridge for 3 hours
- Once chilled, remove foil from cookie sheet and place on flat surface where you can cut or break off pieces to serve and enjoy!
- I like to bag up these pieces and keep them in the freezer throughout the holiday season to enjoy whenever I have a craving!
