Lemon Lavender Cookies just scream summertime to me! The brightness of the lemon mixed with the floral lavender makes for a delightful pairing.
Lemon is so beautiful in baked goods because it balances with sweet so well. The flavor of lemon leaves a longing for more on your tongue and keeps you coming back for more. Lemon is fresh and clean. Lemon baked goods are just another level of delicious. Citrus is one of my favorite flavors to play with in the kitchen. I love using lavender in baked goods as well because we have so much growing around here that it is so easy to harvest, dry, and bake.
Lavender has a calming scent and it carries over into baked goods. Certainly not as strong as using an essential oil but the aroma of dried lavender baking is definitely one that just fills your space. It is refreshing and my family loves it.
These lemon lavender cookies bake into small, easy to enjoy cookies. I chose to top them with a lemon icing as well to just really bring home the fresh lemon flavor. They are soft and chewy cookies that make a tasty addition to summertime potlucks or barbeques.
Lemon Lavender Cookies
Ingredients
- ¼ cup Granulated Truvia or your granulated sweetener of choice
- ¼ cup Butter softened
- Juice of one Lemon
- Zest of one Lemon
- 1½ cups Almond Flour more if needed
- ½ cup Vanilla Protein Powder
- ¼ tsp Baking Soda
- ¼ tsp Baking Powder
- ¼ tsp Salt
- 1 Tbso Dried Lavender
Instructions
- Preheat oven to 350℉
- In a large bowl, cream together butter and truvia with lemon juice and lemon zest.
- To the wet mixture, add almond flour, protein powder, baking soda, baking powder, and salt.
- Mix until combined adding more almond flour if needed for more firm cookie dough texture.
- Stir in dried lavender.
- Scoop cookie dough onto prepared baking sheet into tablespoon sized cookies.
- Bake for 10-12 minutes or until cookies are golden brown
