Almond Flour Banana Bread

This classic recipe is absolutely one you need to have around during the holidays! Almond Flour Banana Bread is such a quick and easy breakfast option for those relatives staying with you. Paired with a hot cup of coffee or tea, this makes for a great start to your day.

Banana bread is one of those recipes that come in handy when you have a last minute bake sale, a family get together, or just need to get rid of those browning bananas. Almond Flour Banana Bread is a low calorie option and can be a meal in itself or used as a snack to hold you over. I love having these around during the holidays because it keeps me away from the table of desserts.

Main Ingredients – Almond Flour Banana Bread

Bananas – The riper the better – Ripe bananas get sweeter with time so this recipe calls for very little sweetener. Plus, they are easier to mash if they are very ripe.

Almond Flour (or Almond Meal) – I haven’t really found a difference between these two ingredients in the recipe so feel free to use either.

Flaxseed – I use flaxseed to add fiber to my recipes because fiber helps to keep you regular and a regular digestive system is a happy digestive system!

Eggs – When baking with almond flour, eggs are the leavening agent that help give this bread its moist, fluffy texture.

Holiday Gifting

So I did need to throw in there that this makes for such a great gift idea for those you may not know what to gifts this year. Maybe a coworker? A neighbor? Your postman? It is easily transportable, very shareable, and serves as a sweet snack while recharging at all the family gatherings. Find some mini loaf tins and you’re set! Just shorten the bake time to 25 minutes. Food is definitely one of my love languages so creating these treats for my friends and family has been such a joy of mine.

Banana Bread (made with Almond Flour)

Ingredients
  

  • 2-3 Bananas riper the better
  • 3 Eggs
  • ¼ cup Truvia
  • ¼ cup butter softened
  • 1 tsp Vanilla Extract
  • 2 cups Almond Flour/Meal
  • 1 cup Ground Flaxseed
  • 1 tsp Cinnamon
  • 2 tsp Baking Powder
  • 1 dash Salt

Instructions
 

  • Preheat oven to 350° and prepare a loaf pan with parchment paper and nonstick spray or a muffin tin with liners
  • In a large bowl, mash bananas. Then add eggs, butter, Truvia, and vanilla. Mix until combined
  • On top of the wet ingredients, add almond flour, flaxseed, cinnamon, baking powder, and salt. Stir until combined.
  • Pour batter into loaf pan or muffin tin.
  • If baking a loaf, bake for 50-55min
  • If baking muffins, bake for 23-25min
  • Remove loaf/muffins from the oven and let cool for 10 minutes before enjoying. Let cool completely before storing/freezing

Notes

You can also try add-ins if you want such as nuts or chocolate chips. I prefer the plain banana bread but have used 1/4cup of add-ins if you so choose.
