May Sweet Breads – Protein Monkey Bread

Protein Monkey Bread unlocks all the childhood memories for me. Monkey Bread is one of those treats that rivaled Sunday morning donuts in my family.

It was something that the whole family could help make and was definitely worth the time. I wanted to create an alternative recipe that was filled with more wholesome ingredients and higher protein content. This helps to fill your body with the fuel it needs to start the day rather than the empty, sugary, traditional recipe.

Protein Monkey Bread is such a fun family treat. It is created with balls of dough rolled in cinnamon sugar layered in a loaf pan (or bundt pan if you double the recipe below). So every bite is filled with delicious flavor. It is a pull apart bread as well which makes it fun and easy to serve.

This dessert is served upside down out of the pan so it’s easy to grab with your fingers from all seats at the table. My family loved the “no plate” rule which means we all shared off the one dessert plate. It’s less dishes and intrigues the kiddos so it’s a win-win!

Ingredients
  

Cinnamon/Sugar Coating

  • ¼ cup Truvia or your granular sweetener of choice
  • 2 tsp Cinnamon

Dough

  • 1 cup Almond Flour
  • 1 cup Vanilla Protein Powder
  • 1 cup Ground Flaxseed
  • ½ cup Butter cold
  • ½ cup Truvia or your granular sweetener of choice
  • 1 tsp Vanilla Extract
  • ¼ cup Almond Milk
  • 1 tbsp Baking Powder
  • ½ tsp Salt
  • 3 Eggs

Glaze

  • ½ cup Butter
  • ½ cup Truvia Brown Sugar or brown sweetener of your choice

Instructions
 

Cinnamon Sugar Coating

  • Combine Cinnamon Sugar coating ingredients in small bowl. Set aside

Dough

  • In large bowl, combine almond flour, protein powder, and flaxseed.
  • Cut cold butter into small pieces and cut into the flour mixture until crumbly texture is achieved.
  • Add Truvia, vanilla, almond milk, baking powder, salt and eggs. Mix until dough is formed
  • Preheat oven to 350° and spray 9×5 loaf pan with nonstick spray
  • Using a tablespoon or a cookie scoop, roll dough into balls and coat in cinnamon sugar before dropping into prepared loaf pan.
  • Once all dough is balled up, sprinkle the rest of the cinnamon sugar coating over the top of the loaf in the pan.

Glaze

  • In small pan, melt together butter and brown sugar until completely combined
  • Pour melted glaze over top of the unbaked loaf.
  • Bake for 25 minutes. When done, pull bread out of the oven and be sure to let sit for 10 minutes to cool slightly before serving.
  • When ready, flip bread out onto a plate, serve warm and enjoy!
