May Sweet Breads – Almond Blueberry Bread

Almond Blueberry Bread is the perfect addition to any brunch spread. Whether you are hosting or bringing something to share, this Almond Blueberry Bread will be such a hit.

The classic blueberry flavor is necessary at any breakfast/brunch gathering in my opinion. There is nothing quite like a blueberry breakfast item. It is such a refreshing, bright morning flavor. Do I even need to mention the fact that blueberry pairs with milk, coffee, and orange juice so well?

Sweet, breakfast breads are such a great start to the day. They provide that touch of sweetness that you need after a hearty breakfast. I found that creating a healthier version of this sugary, gluten full sweet bread helped sit better on my stomach after a hearty brunch.

Instead of all-purpose flour, I use a mixture of pea protein complex powder and almond flour. That paired with baking powder, create a soft, dense, cravable texture. There is still TONS of flavor so you don’t miss the “dessert” portion of brunch.

Have you ever used almond extract instead of vanilla extract in baking? Almond extract brings a much more powerful aroma into the baking that just heightens the flavors around it. Awesome Almond Blueberry Bread

Ingredients
  

  • 4 Eggs
  • ½ cup Butter softened (nearly melted)
  • ½ cup Truvia or granulated sweetener of your choice
  • 1 tsp Almond Extract
  • 1 cup Almond Flour
  • 1 cup Vanilla Protein Powder
  • 2 tsp Baking Powder
  • ¼ tsp Salt
  • ½ cup Fresh Blueberries dried blueberries are good too!

Instructions
 

  • In a large bowl, mix together the eggs, butter, sugar, and almond extract
  • On top of that mixture, add almond flour, protein powder, baking powder and salt
  • Fold in blueberries
  • Pour batter into greased loaf pan
  • Bake at 350° for 40 minutes
