Vegan Chocolate Zucchini Bundt Cake

Ingredients
  

Bundt Cake Batter

  • 2 bananas mashed
  • ¼ cup Nut Butter I used peanut butter
  • 1 tsp Vanilla Extract
  • ¾ cup Truvia
  • ¼ cup Cocoa Powder
  • ¼ cup Ground Flaxseed
  • cups Almond Flour
  • 1 tsp Baking Powder
  • ½ tsp Salt

Icing

  • 1 cup Smooth Peanut Butter
  • ½ cup Powdered Truvia
  • 2 TBSP Almond Milk

Instructions
 

  • In a large bowl, mash bananas and mix with nut butter, vanilla and sweetener,
  • Then add in cocoa powder, almond flour, flaxseed, baking powder and salt
  • Pour mixture into a greased bundt pan
  • Bake at 350℉ for 50-55min
  • In separate bowl, mix together all icing ingredients and add milk until desired consistency is reached
  • When cake is done baking, let cool slightly before turning over onto a plate for serving. Ice cake while still warm so that a drizzle happens. Slice and Enjoy!
