Cherry Almond Coffee Cake Muffins
Seasonal, delicious, totally worth a try!
Ingredients
Batter
- ¾ cup Butter softened
- 5 Eggs
- ¾ cup Brown Truvia
- 1 tsp Almond Extract
- 2 cups Almond Flour
- ½ cup Ground Flaxseed
- ½ cup Vanilla Protein Powder
- 2 tsp Baking Powder
- 1 tsp Salt
Filling
- ½ cup Granulated Truvia
- ½ cup Brown Truvia
- ½ cup Cherries Frozen or fresh
Instructions
- In a medium bowl, mix together butter, eggs, brown Truvia, and almond extract
- On top of wet ingredients, add in all the rest of the batter ingredients and stir until just combined
- In a separate bowl, combine all filling ingredients until cherries are well coated with sweetener
- In a prepped muffin tin, scoop 1T of batter, followed by ½T of filling and topped with another 1T of batter
- Bake muffins at 350℉ for 25min
- Enjoy warm!
