Peach Scones

Ingredients
  

Scones

  • 2 cups Almond Flour
  • ½ cup Ground Flaxseed
  • ½ cup Vanilla Protein Powder
  • ½ tsp Baking Soda
  • ¼ tsp Salt
  • 2 TBSP Cold Butter right outta the fridge
  • 2 Eggs
  • 1 TBSP Granulated Truvia
  • ½ cup Diced Peaches

Icing (optional but highly recommended)

  • 1 cup Powdered Sugar
  • 1 TBSP Maple Syrup
  • 1-3 TBSP Almond Milk

Instructions
 

  • In a medium bowl, mix together almond flour, flaxseed, vanilla protein powder, baking soda, and salt.
  • On top of dry ingredients, cut up cold butter and using two knives or a pastry cutter, cut in butter to dry ingredients until mixture is clumpy.
  • Add in the rest of the ingredients and mix dough until just combined.
  • On a surface sprinkled with almond flour, roll out dough into a 1/2in thick square
  • Cut square into four quarters and then cut each quarter into two triangle halves.
  • Sprinkle the top of scones with granulated truvia
  • Place each triangle onto a lined and sprayed cookie sheet
  • Bake at 350℉ for 20min or until golden brown.
  • While baking, mix together icing ingredients until desired consistency is reached
  • Let scones cool for 10min before drizzling the top with icing
  • Enjoy!
