Who is ready for Thanksgiving? Anyone already meal planning? Well here is a recipe that will be a delicious way to start your holiday weekend! These donuts whip up so fast and are such a crowd pleaser.
Pumpkin Spice and everything nice, right? … RIGHT! These gluten-free, high protein, high fiber baked donuts hit all the right notes when you are craving a fall favorite. Earlier this week, you heard about my love for donuts and this recipe attests to that for sure. I needed a little something after our hearty weekend brunches and something to satisfy my sweet tooth craving for something pumpkin in the fall.
Main Ingredient Breakdown
Greek Yogurt- This is an ingredient that I never thought I would be so fond of until I started letting go of my previous inclinations and letting this ingredient fill it’s place in so many of our recipes. Greek yogurt is so versatile – you can use it as activator in baking, or you can use it in place of sour cream in savory dishes.
Pumpkin Puree- I try to stay away from pumpkin pie filling just because of the extra sugar that is usually added in but if all you have is the pie filling, then let’s use that because I don’t want you to miss out on making this recipe just because of one ingredient.
Almond Flour/Flaxseed/Protein Powder- This combination of flour-like ingredients helps to enhance the texture and taste of these donuts. I really enjoy using almond flour in my baking because it is has a great texture, contributes more protein to my recipes and is easier to work with than you might think. When paired with egg and moist ingredients like yogurts or purees, almond flour rises and bakes very similarly to that of all purpose flour. This is the Protein Powder I like to use in all of my baking.
Truvia- This stevia based sweetener is my baking sweetener of choice because you can treat it as you would regular sugar. I find when I switch between liquid or granular sweeteners, I have to alter other parts of my recipe due to the dry vs. liquid content. I have not found any negative effects of baking with this alternative sweetener. Even though it may be zero calories and sweetens like sugar, it still needs to be used in moderation, of course.
Our Lifestyle
I have found that modifying our lifestyle to be more gluten free helps our tummies feel more at ease after every meal. No one in my family has serious gluten sensitivities but after my husband and I completed out first 30-Days to Healthy Living cleanse through Arbonne, we really noticed a change in our digestion. A change for the better – we weren’t uncomfortable after meals and our weight managed to stay more steady.

Easy Pumpkin Spice Donuts
Ingredients
- ½ cup Greek Yogurt
- ½ cup Pumpkin Puree
- 1 Egg
- ⅓ cup Truvia your sweetener of choice
- 1 tsp Vanilla Extract
- ¼ cup Flaxseed Meal
- ¼ cup Almond Flour
- ¼ cup Vanilla Protein Powder
- ½ tsp Baking Powder
- 1 tbsp Cinnamon
- 2 tsp Nutmeg
- 1 dash Ground Clove
- 1 pinch Salt
Icing (optional)
- 1 cup Powdered Truvia or powdered sweetener of choice
- 1 tsp Vanilla Extract
- 1 tbsp Vanilla Almond Milk more as needed to reach desired consistency
Instructions
Donut
- In one bowl, mix together greek yogurt, pumpkin puree, egg, sweetener of choice and vanilla
- In another bowl, mix together flaxseed, almond flour, protein powder, baking powder, cinnamon, nutmeg, clove, and salt
- Add the dry ingredients into the wet ingredients and stir until combined
- Pour batter into a donut pan (Makes six donuts)
- Bake in a 350* oven for 15-17min
Icing (Optional)
- While donuts are baking, mix together powdered sweetener of choice with vanilla extract
- Add almond milk one tablespoon at a time until you reach your desired consistency
- Once donuts are done and have been cooled for 10 minutes, frost them and enjoy!
