Chocolate Espresso Cookies are the afternoon pick me up you need in your life! These delicious cookies are filled with mocha flavor. They are so good.
I made these gluten free cookies as small bite sized cookies. Just like an espresso shot is a small, quick pick me up. They are the best cookies to make in a large batch. You need to have them available on your kitchen counter anytime you need an afternoon pick me up.
Espresso Cookies
Your favorite afternoon "pick me up" in cookie form!
Ingredients
Cookies
- ¼ cup Butter melted
- 1 cup Truvia or your favorite granulated sugar alternative
- 2 Eggs
- 1 tsp Vanilla Extract
- 1 cup Protein Powder I used Coffee flavor but Vanilla would work too
- 1 tsp Coffee Grounds
- 1 Tbsp Cocoa Powder
- 1 tsp Baking Powder
Icing (optional but highly recommended)
- 1 Tbsp Butter melted
- ½ cup Powdered Truvia or your favorite powdered sugar substitute
- 1 Tbsp Almond Milk more if needed
Instructions
Cookies
- Preheat oven to 350℉
- In a medium sized bowl, mix together Butter, Truvia, Eggs, and Vanilla until combined.
- On top of wet mixture, add Protein Powder, Coffee Grounds, Cocoa Powder, and Baking Powder. Mix until combined.
- Scoop TBSP sized dough balls onto prepped cookie sheet.
- Bake cookies for 8-10 minutes
Icing (optional but highly recommended)
- In small bowl, mix together butter and powdered truvia.
- Add Almond Milk one TBSP at a time until desired consistency is reached. I like mine to be thin so I could drizzle it over top but a thicker icing plopped on top would be delicious as well!
