I love the Autumn season but I certainly don’t want summertime weather to be over quite yet. I enjoy these last few weeks filled with BBQs and Back to School Nights. Monster cookies make the greatest addition to your potluck at the end of summer because they involve alot of odds and ends kind of ingredients. They are easy to grab and enjoy. Monster cookies are also a crowd pleaser because they have that sweet and salty element we all crave in desserts.

Gluten Free Monster Cookies
Ingredients
- 1 cup Peanut Butter crunchy or smooth will work
- ½ cup Butter softened
- ½ cup Brown Truvia or your favorite brown sugar substitute
- ½ cup Truvia or your favorite granulated sugar substitute
- 1 tsp Vanilla Extract
- ½ cup Oats gluten free if necessary
- ½ cup Protein Powder vanilla or chocolate will work
- ½ cup Ground Flaxseed
- 1 tsp Baking Powder
- ½ cup M&Ms
Instructions
- Preheat oven to 350℉
- In a large bowl, mix together Peanut Butter, Butter, Sugars, and Vanilla.
- Add Oats, Protein, Flaxseed, and Baking Powder. Mix until combined.
- Stir in M&Ms
- Scoop cookie dough onto prepped baking sheet.
- Bake for 12-15 minutes and ENJOY!
