Happy August, my friends! Can you believe we are in the eighth month of the year already? It seems to just go so fast! This month I am showcasing cookie recipes to please even the most picky cookie connoisseur.
I want to start this month off with a classic that I lean on in many potluck situations because it is such a crowd pleaser cookie. The Snickerdoodle cookie is a perfect balance of sweet and cinnamon with a touch of salt added for complexity.
I like to bring these cookies and a treat in the office with my co-workers. I like bringing these cookies to share with the athletes that I coach. These cookies are so soft, chewy, and delicious. They are a perfect afternoon snack or after dinner dessert.
I use a mix of almond flour, flaxseed, and vanilla protein powder to produce a soft, fluffy, cookie. My kiddos love the cookies, my husband loves the cookies, they are so tasty!
What I also love about these cookies is how transportable they are as well. Sometimes, you get these soft, chewy cookies but they are impossible to hold in your hand because they just fall apart. Sometimes you get cookies that are easy to hold but they are stiff and crunchy and hard as rocks so they are not enjoyable. These snickerdoodle cookies are the perfect balance of soft, chewy, easy to handle, and so satisfying.

Almond Flour Snickerdoodles
Ingredients
Cookie Dough
- ¾ cup Butter softened
- ½ cup Granulated Truvia or your granulated sweetener of choice
- ½ cup Brown Truvia or your brown sweetener of choice
- tsp Vanilla Extract
- 2 Eggs
- ½ tsp Baking Soda
- ½ tsp Baking Powder
- ½ tsp Salt
- 1 tsp Cinnamon
- 2 cups Almond Flour
- ½ cup Ground Flaxseed
- ½ cup Vanilla Protein Powder
Cinnamon Sugar Coating
- ¼ cup Granulated Truvia or granulated sweetener of your choice
- 1 tbsp Cinnamon
Instructions
- Preheat oven to 350℉
- In a small bowl, mix together Cinnamon Sugar Coating and set aside
- In a large bowl, cream together butter, sugars, vanilla, and eggs.
- On top of mixture, add baking soda, baking powder, salt, cinnamon, almond flour, flaxseed, and protein powder. Mix until combined
- Scoop spoonfuls of batter onto prepared baking sheet
- Wet the bottom of a glass and press into the cinnamon sugar mixture then press down each cookie slightly.
- Bake cookies for 10min
- Enjoy!
