March Mug Cakes: Oatmeal Raisin

Oatmeal Raisin goodness in a single serve mug. You ready to wrap up this series with a most delicious cookie cake? Here we walked the thin like between cookie and cake with this mug-sized indulgence. I used less of a leavening agent again because I wanted to resemble a cookie like consistency. The more dense, the more like a cookie it will feel. Add a little more leavening and it’ll be more like a cake. Which is still delicious but just a different consistency. Choose what you like for your version of this recipe.

Oatmeal Raisin cookies hold a special place in my heart because they are the first goodie I ever baked for my husband. They are his favorite and have become one of my son’s favorite cookies as well. I have worked with many oatmeal raisin recipes and have learned a balance between oats, oat flour, protein powder, almond flour and sweetener to create a recipe that we believe has a beautiful balance of hearty and indulgent.

Oatmeal raisin cookies get a reputation for being the healthier cookie but I find that they are often loaded with sugar or have icing added to them to cover the heartiness of the oats. This is what I aimed to change. I wanted to balance the sweetness of the raisins and let the oats shine through with a true oatmeal taste. Rather than cover it up, I wanted to let it shine through.

Oats are such an earthy flavor. Raisins have such a natural sweetness about them. I balance these two and let them lean into each other. It’s no wonder they have been paired in a cookie. This recipe allows the goodness in a single serve mug to truly shine.

Oatmeal Raisin Mug Cookie

Ingredients
  

  • 1 TBSP Almond Flour
  • 1 TBSP Oats
  • 1 TBSP Ground Flaxseed
  • 1 TBSP Vanilla Protein Powder
  • 1 TBSP Truvia or your sweetener of choice
  • 1 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1 TBSP Raisins
  • 1 TBSP Almond Butter
  • 2-3 TBSP Almond Milk

Instructions
 

  • In microwave safe mug, combine almond flour, oats, flaxseed, protein powder, truvia, cinnamon and raisins
  • Add almond butter and almond milk until cookie dough consistency is reached
  • Microwave for 1:30-2:00 minutes
  • Let cool but enjoy warm!
