Chocolate Zucchini Bread

A crowd pleasing recipe to hide that zucchini from the garden
Prep Time 15 minutes
Cook Time 50 minutes

Ingredients
  

  • 1 cup Zucchini Shredded and Drained
  • ¾ cup Truvia
  • ¼ cup Nut Butter I used Almond Butter
  • 1 cup Almond Milk or chocolate flavor!
  • 1 tsp Vanilla Extract
  • 1 cup Almond Flour
  • ¼ cup Ground Flaxseed
  • ¼ cup Cocoa Powder
  • 1 tsp Baking Powder
  • ½ tsp Salt

Instructions
 

  • In a large mixing bowl, mix together zucchini, truvia, nut butter, almond milk, and vanilla until well combined.
  • On top, add almond flour, flaxseed, cocoa, baking powder, and salt. Mix until just combined
  • Pour batter into a prepped and lined 9×5 loaf pan
  • Bake at 350℉ for 50-55min
  • Let cool completely before slicing and enjoying!
