March Mug Cakes: Vanilla Funfetti

A vanilla funfetti mug cake filled with fun surprises in each bite! This recipe boasts higher protein, lower sugar, and less guilt than other cake recipes because I use a blend of vanilla protein powder and flaxseed which helps to maximize the nutrients in one little mug.

This cake is a tribute to my birthday week! So what better way to celebrate than with a classic vanilla funfetti mug cake?! Truly, all I need is a candle lit in the middle and I’m ready to make a wish.

Funfetti Mug Cake

This mug cake is so light and fluffy yet sweet and indulgent that it makes such a perfect after meal treat. I could not wait to share this recipe with all of you. The sprinkles add a yummy surprise in each bite. The protein/flaxseed mixture creates an irresistible texture that keeps you coming back for more bite after bite.

I think my favorite part of these mug cake recipes is that they are single serving recipes. You can finish those whole thing without sharing and without feeling guilty about finishing the whole thing. Often, I find that when given the option, I’ll eat too much dessert and feel bad later. In the case of these mug cakes, I don’t feel that way because I know they are portioned just right. That’s the key here: Everything is good in moderation. I crave something sweet and these are the perfect fix.

The ingredients I use in each mug cake is filled with fiber and protein. This helps to fuel your body in a more effective way than filling your body with the empty calories of a sugary, outrageous dessert. I really enjoy the balance of these cakes I have created. Ingredients
  

Cake

  • 1 TBSP Almond Flour
  • 1 TBSP Ground Flaxseed
  • 2 TBSP Vanilla Protein Powder
  • 2 TBSP Truvia or sweetener of your choice
  • 1 tsp Baking Powder
  • 1 tsp Vanilla Extract
  • 1 TBSP Butter softened
  • 3 TBSP Almond Milk
  • Sprinkles added to your heart's content 🙂

Icing (Optional)

  • 1 TBSP Powdered Truvia or your powdered sweetener of choice
  • 2-3 tsp Almond Milk added until desired consistency

Instructions
 

  • In a 12oz mug, mix all dry ingredients
  • Then add all wet ingredients (including sprinkles) and stir to thoroughly combine
  • Place mug in microwave and cook for 1min 30sec (maybe up to 2min if middle isn't done when you take it out)
  • Meanwhile, mix together icing ingredients in separate bowl
  • After cake is done, remove and let cool for five minutes.
  • Ice your cake and add more sprinkles if you want – ENJOY!

Notes

I obviously only had Christmas sprinkles left in my pantry haha so feel free to add any mix ins that might be tasty! Rainbow sprinkles, Chocolate Jimmies, colored sugar, flavored chips, etc.
