Quick Lunches: Guacamole-ole-ole

Guacamole-ole-ole doesn’t always have to be extra! This fan favorite is so easy to make at home and my kiddos have taken to giving this word too many syllables at the end. Guacamole-ole-ole is such a wonderful addition around our household. I use it as a side dish, a topping and a dip.

This guacamole recipe isn’t spicy so my kids love it on just about anything or even by itself. I love knowing that they are getting some of their essential nutrients and they love that it tastes so good. IT’s a win-win. Guacamole-ole-ole will find its way onto my kids’ lunch plates pretty often! Guacamole-ole-ole doesn’t last longer than three days in this household so we find some creative way to fit it into our meals those few days.

I love guacamole on top of nachos, tacos, quesadillas, etc. These are often the main dish at dinner time and the guac is our go-to topping. It whips up so easily and does well when it sits in the fridge for a few hours before serving. The best addition to any dinnertime dish.

Finally, guacamole is always first used as a dip with chips before or with dinner. My kids will eat any chip dipped in guacamole but we certainly prefer tortilla chips. We’ve discovered the “Siete” brand of chips and they are such a great, grain-free alternative to your standard corn tortilla chip.

No matter what way to serve it, guacamole doesn’t always have to be extra. Take the time to quickly whip it up and elevate your dinnertime!

Ingredients
  

  • 2-3 Avocados
  • 1 Tomato
  • ½ Red Onion
  • ½ bunch Cilantro
  • 1 tbsp Minced Garlic
  • 1 tbsp Lime Juice
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 2 tsp Garlic Salt

Instructions
 

  • Dice, scoop, and mashed avocados in large bowl
  • Dice tomato, onion, and cilantro – add to the bowl and mix with mashed avocado
  • Add minced garlic, lime juice, chili powder, cumin, and garlic salt – mix to combine
  • Enjoy with your favorite tortilla chips!
