Quick Lunches: Momma’s Lighter Chicken Salad

Momma’s lighter chicken salad is the best lunch for those who want a lighter version of the classic chicken salad. This may be a lighter version but it is still so flavorful and delicious. Momma’s lighter chicken salad can also be shared with the kiddos – so it’s a win-win recipe! This chicken salad is perfect for throwing together leftovers and getting rid of veggies that are about to go bad.

I wanted to make sure to hit you with a homerun in this first series post of the year. I assure you, this momma’s lighter chicken salad is it! Packed with flavor, this meal is so easy to make, easy to serve, and even easy to transport (believe it or not). I’ve taken it on car rides, picnics, and even hiking. It is so easy to transport. The trick is to have handy, disposable containers that you can toss when you are out and about. For example, we reuse the containers that Hillshire Farm deli meats come in for this exact reason: to transport and toss this chicken salad for travel lunches.

I started creating this recipe out of the need to lighten your traditional chicken salad recipe. Usually are loaded with lots of mayo and sugar. My kids and I love a good chicken salad whether is is premade from the grocery store, or from a local deli. I can’t be taking the kids out to the deli everytime we have a craving for some chicken salad. So I started playing with a recipe I could make at home. It’s been such a hit amongst my entire family.

Momma’s Lighter Chicken Salad

Ingredients
  

  • 1 can Shredded Chicken
  • 1 Tomato
  • 1 Avocado
  • 1 tbsp Mayonnaise or plain Greek Yogurt
  • ½ tsp Cumin
  • ½ tsp Chili Powder
  • 1 tsp Garlic Salt

Instructions
 

  • Drain can of chicken and add to a bowl.
  • Dice tomato and avocado – add to the bowl
  • Mix in Mayo, Cumin, Chili Powder, and Garlic Salt
  • Enjoy!
