The Ultimate Mug Cake

My sweet tooth is no joke and this mug cake satisfies every bit of it. I tried SO MANY mug cakes during my maternity leave because I was anxious to leave the house with a new baby but I wanted something sweet and knew that I couldn’t bake a whole cake because “everything in moderation”, right? Well this was my creation and is my favorite mug cake by far!

The best part of being an adult is realizing that you don’t need a special occasion to eat cake. And this mug cake helps to satisfy the craving of eating cake without all the time, energy, and guilt associated with baking a whole cake. I found that my maternity leave was filled with ups and downs and challenges and things that no one can prepare you for beforehand. So I sought things to help me be ME again – funny enough working out and dessert became those “things” for me. I started altering recipes to better align with my family’s health choices and found that the recipes were a hit! Even among in-laws, friends, and coworkers.

This mug cake has become a quick treat that I make for my kids as a breakfast option, a warm dessert all to myself after the kids have gone to bed, or is a crowd pleaser snack to share after the school day. I tried to use simple ingredients that you probably have on hand already in your household. Once I learned how to bake with protein powder, it changed our kitchen. I use it in just about every baked good I make and this is no exception. Quick and easy is the name of the game here for sure.

Ingredients

Banana – Ripe bananas are the best because they are already soft and are inherently sweeter than green/yellow bananas.

Protein Powder – any flavor will do. Vanilla flavor with leave you with more of a banana bread kind of mug cake whereas Chocolate flavor will leave you with more of a chocolate cake vibe.

Flaxseed – This is used as a thickener/leavening agent that works with the banana and the baking powder to give the cake its delectable texture.

Nut Butter – You can use any kind but I prefer almond butter or peanut butter. After it melts on top of the cake, it’s like a frosting of sorts and so delicious!

Ingredients
  

  • 1 Banana mashed
  • 1 scoop Protein Powder any flavor, vegan if desired
  • 1 scoop Ground Flaxseed
  • ½ tsp Baking Powder
  • 1 tbsp Nut Butter any kind, plus more for topping

Instructions
 

  • In a microwave-safe bowl, combine all ingredients until you reach a batter consistency
  • Microwave for 1.5-2minutes
  • Scoop nut butter on top to melt, cool and enjoy!

Notes

Be careful after microwaving – the bowl will be VERY hot!
