Chocolate Zucchini Bread
A crowd pleasing recipe to hide that zucchini from the garden
Ingredients
- 1 cup Zucchini Shredded and Drained
- ¾ cup Truvia
- ¼ cup Nut Butter I used Almond Butter
- 1 cup Almond Milk or chocolate flavor!
- 1 tsp Vanilla Extract
- 1 cup Almond Flour
- ¼ cup Ground Flaxseed
- ¼ cup Cocoa Powder
- 1 tsp Baking Powder
- ½ tsp Salt
Instructions
- In a large mixing bowl, mix together zucchini, truvia, nut butter, almond milk, and vanilla until well combined.
- On top, add almond flour, flaxseed, cocoa, baking powder, and salt. Mix until just combined
- Pour batter into a prepped and lined 9×5 loaf pan
- Bake at 350℉ for 50-55min
- Let cool completely before slicing and enjoying!
