Vegan Oatmeal Zucchini Chocolate Chip Cookies
A delicious way to use up that zucchini in your garden
Ingredients
- 1-2 Medium Zucchini
- 1 Banana over ripe
- ½ cup Nut Butter I used Almond Butter
- 1½ cups Oats
- ½ cup Ground Flaxseed
- ½ cup Dark Chocolate Chips
Instructions
- On a flat surface, shred zucchini and lay on a dish towel. Squeeze out excess water and get the zucchini as dry as you can.
- In a large bowl, mash banana, add in shredded zucchini and nut butter. Mix until well combined.
- Add in oats, flaxseed, and dark chocolate chips and mix well.
- Scoop cookies onto prepped cookie sheet and press down slightly since they will not spread like other cookie recipes.
- Bake at 350℉ for 12-15min. Let cool and enjoy!
