Kid-Friendly Pancakes

These kid-friendly pancakes are made with only three ingredients and are great for making ahead as an on-the-go snack or enjoyed warm off the skillet. If there is one recipe I would recommend for you to try THIS WEEK with your family, it would be this one.

I love that this recipe is only one banana, one egg, and two tablespoons of your favorite protein powder (enough to thicken the batter) – these are ingredients that I have in the house all the time. Eggs and bananas are on my grocery list nearly every week so I can count on these pancakes if ever I am in a pinch to feed the kids. it is so easy and when picky toddlers are calling the shots at breakfast, I know this will be a hit!

Breakfast

We like to enjoy these pancakes as a weekday breakfast since it is so simple to cook up for the kids. We also like to enjoy these as a family on the weekend for breakfast and dress them up a bit with some melted nut butter on top in place of syrup. This slight change of using nut butter instead of syrup nearly eliminates the sugars we are consuming and adds a decent amount of protein to the already protein-filled pancakes.

The pancakes are fluffy, tasty, and loaded with necessary nutrients. I leaned on this recipe when my kids were babies and started getting their first teeth. I kept an eye on them while they ate these silver dollar sized pancakes but they really enjoyed the independent eating. Perfect sized, kid-friendly pancakes for their little hands and little bites.

Snack

My kiddos use these as on-the-go snacks as well. I feel as though I have turned into a walking vending machine. Every mom knows snacks are musts whenever you leave the house! These pancakes take a little bit of prep but I can have these on hand and know that I am feeding my kids a wholesome snack that will hold them over until the next meal.

Sometimes our schedule calls us away from the house over mealtime and that is when these pancakes come in handy again. They are so easy to have in my diaper bag ready to hand to a kiddo who is hungry (or maybe hangry). I know I am filling their tummies with healthy, wholesome nutrients but the kids think they are just having another tasty snack – It’s a win-win!

Kid-Friendly Pancakes

Ingredients
  

  • 1 Banana
  • 1 Egg
  • 2 TBSP Protein Powder your favorite flavor

Instructions
 

  • Begin warming a skillet to medium heat
  • In small bowl, mash the banana
  • Add in egg and protein powder - Mix to combine
  • Pour batter into skillet to form small pancakes
  • Cook first side for 4-5 min or until "flippable"
  • Flip pancakes and cook another 4-5 min
  • Serve warm or save for an on-the-go snack later!

Notes

My kids love these just plain or with a little nut butter - Momma likes these pancakes just plain on the car ride to school drop off!
