Mocha Cinnamon Rolls

Ingredients
  

Rolls

  • ¼ cup Butter softened
  • ½ cup Coffee
  • ¼ cup Granulated Truvia
  • 3 Eggs
  • 3 cups Almond Flour
  • 1 cup Ground Flaxseed
  • 1 cup Protein Powder plain or flavored
  • 2 tsp Baking Powder
  • 1 tsp Ground Espresso Beans any roast

Filling

  • ¼ cup Butter melted
  • 1 cup Dark Chocolate Chips
  • 2 TBSP Coffee

Icing

  • 1 cup Powdered Truvia
  • ¼ cup Chocolate Protein Powder cocoa powder will work too
  • 1-3 TBSP Almond Milk

Instructions
 

Rolls

  • In a large mixing bowl, combine butter, coffee, granulated truvia, and eggs
  • Add almond flour, flaxseed, protein, baking powder and espresso powder. stir until stiff dough forms
  • Lay a piece of parchment paper on flat surface and sprinkle with almond flour.
  • Pour dough out onto prepared surface and roll dough into a large rectangular shape about ¼in thick

Filling

  • Melt together all ingredients in a saucepan over medium/low heat until smooth and melty
  • Pour filling onto rolled dough and spread evenly.
  • Using the parchment paper for support, roll rectangle up into itself to form a cinnamon roll log.
  • Use a sharp knife or floss to cut log into 12 even rolls
  • Lay each roll into a greased 9×13 pan
  • Bake rolls at 350℉ for 35-45min or until golden brown

Icing

  • In a small bowl, mix together powdered truvia and cocoa powder (or protein powder)
  • Add almond milk one tablespoon at a time until desired consistency is reached
  • After baking, let rolls cool for a few minutes and drizzle icing over the top of all the rolls.
  • Serve and enjoy warm!
